Unless you wish to concede and pay the tax you need to put in a notice of appeal and request to postpone payment of the tax within the 30 day deadline. HMRC will then give you time to collate the information requested. I suggest that you consult a solicitor or accountant experienced in tax to assist and advise you further in this.
